One thing any diet will make you sick of at some point is salad! In every health journey you come to the point where you ask the question, “How many more lettuce-wrapped burgers and salad variations can I handle?”

Recently, we have been on a quest to find you the perfect way to make a burrito, wrap, or even tostada if you decide! There are plenty of recipes for creating your own shells using cauliflower but they are time consuming and messy.

Then it happened! We discovered these Crepini egg and cauliflower tortillas and gave them a shot. We were so excited we had to share them with you. Plus we wanted to give you an easy healthy chicken wrap recipe to get your creative crepini juices going!

Absolutely if you find the right wraps. Wraps are a great way to eat protein and vegetables. You can put any lean and green items, or other ingredients you want in the wrap. Wraps are also a quick meal if you’re short on time.

The key to anything healthy is the ingredients. A flour-based wrap is probably not the healthiest option. Let’s take a look at what makes a good healthy wrap. You don’t want a wrap to throw you out of fat burn!

What Makes a Great Wrap?

Let’s first define what a wrap is. Typically it’s a tortilla that we fill with ingredients and then wrap it up. Tortillas are a replacement for bread but neither are healthy. Now for what we need in a good tortilla wrap.

What separates a great wrap from a disappointing one? In my opinion, it all comes down to three things: taste, structure, and healthfulness. Let’s break that down for you.

The Wrap Flavor

First, the wrap needs to have a subtle flavor that complements the other ingredients. A lot of “healthy” wraps don’t have much flavor, which makes them bland and unappetizing. On the other hand, some of the approved wraps out there are so strong in flavor, you mess your diet up by adding extras to hide the wrap taste.

Tortilla Structure and Sturdiness

Second, it should be sturdy enough to hold everything together without falling apart. What’s the point of creating a tasty healthy chicken wrap recipe, if the whole thing falls apart on the first bite? No one wants that.

Third, it should be good for you! That’s a given, right? But there are a lot of “healthy” wraps on the market that aren’t as healthy as they claim to be. They usually have too many carbs, sugars or calories. What is the point of creating a healthy chicken wrap recipe if the wrap itsef impacts your fat burn journey?

The Crepini for our Healthy Chicken Wrap Recipe

The Crepini egg and cauliflower wraps meet all three of these criteria. They have a neutral taste, they’re sturdy enough to hold everything together, and they have zero carbs or sugars. Take a loos at the criteria from Optavia’s condiment list and you’ll see that one of these tortillas is, at most, a condiment. Based on it’s ingredient list it could also be 1/4 of a green.

Of our top three criteria, Crepini hits on two for sure. This wrap is very healthy and perfect for your Optavia weight loss and diet journey. It also has the perfect flavor. It’s subtle and compliments whatever you fill it with in your recipe.

As far as structure, the Crepini is more delicate than we like. In our Healthy chicken wrap recipe we were very careful not to break it. However, when microwaved for 10 seconds before filling, the Crepini stayed together without fail!

We kept it simple and were blown away by the result. here’s how it happened. We had a fun health and hope night with our local community of Optavia friends and we were in charge of… You guessed it: Salad. Boring!

The next day, we were looking for something to have and what did we think of? Exactly! Salad was at the top of the list. We just couldn’t have another chicken salad.

A Wrap Just Tastes Better

We had the idea to take the same ingredients and put them into these wraps we had just bought. The result was full of hope! Finally, a way to enjoy salad without feeling like I was eating salad. Think about it for a second. Isn’t a sandwich just a salad smashed between bread? But it feels like so much more!

What you need for the Healthy Chicken Wrap Recipe

Ingredients:

We kept it really simple. We didn’t use all the items in a typical Greek salad but feel free to get creative. The beauty of a wrap is how we fill it with creativity!

For One Healthy Chicken Wrap

  • 1 Crepini Egg and Cauliflower Wrap
  • 2 oz rotisserie chicken: We used pre-cooked and frozen chicken from Costco. They only take 8 minutes to prep and they are tasty and healthy!
  • shredded romaine lettuce 1/4 Cup
  • Bell pepper 1/4 Cup
  • 1/4 cup cucumber
  • Red Onion (Not 5&1 Approved)
  • pepperoncini pieces
  • Feta Cheese Crumbles
  • Ken’s Simply Vinaigrette
  • Additional Options: Olives and tomatoes

This is so easy we feel bad explaining it. You don’t have to stick with our method because these wraps are versatile. But start here.

Prep The Chicken

Start by preparing your chicken. Because we used the chicken from Costco it was as easy as adding it to the countertop oven at 375 and baking for about 8 minutes.

Prep The Veggies

Chop up the lettuce, cucumbers, bell pepper, and onion (not plan approved). You will have leftovers so feel free to make a salad (notice the sarcasm here) or another wrap.

Prep The Crepini

To prepare the Crepini, place it on a microwave-safe plate and heat it for about 10 to 15 seconds. Remove the Crepini from the microwave and add your ingredients. Warming the wrap makes filling and folding it much easier.

Create The Healthy Chicken Wrap

Start by adding the lettuce to the center of the wrap. Follow with cucumber, bell pepper, and additional veggies. Sprinkle with a little bit of feta cheese and top with pepperoncini.

Finish off the wrap by adding the chicken. Use about 1 tsp of Ken’s Greek dressing and cover the vegetables and chicken.

Be careful not to overfill the wrap. Our favorite method for folding the wrap is ensure we created a line down the center of the “tortilla” with our filling. We fold the two ends nearest the ingredients about 1/3 of the way to the center. Finish by folding one of the remaining ends of the tortilla inward about 1/3 of the way toward the center. Fold the same end over again completing the wrap.

    3 oz Skinless Boneless Chicken Breast
  • Warm Cremini wrap for 10 seconds in a microwave
    1 Cremini Petite Egg Wraps With Cauliflower
  • Top Cremini wrap with lettuce, bell pepper, cucumber, onion, and any other ingredients you decide. Be careful not to over fill.
    1/2 Cup Romain Lettuce, 1/4 Cup Cucumber, 1/4 Cup Bell Pepper, 1/4 Cup Red Onion
  • Add warmed chicken. Top with cheese and dressing. Fold into wrap. Fold ends in first and then roll to wrap.

For a full lean and green, be sure to measure out how much of each ingredient you use in the wrap.  Leftover ingredients can be added to a second wrap as wraps may be counted towards green or used as condiment.
